Hi All - Does anyone know how to set up billing anchors within Memberstack so that all members are billed on the 1st and anyone who signs up mid month will have their first month prorated? Stripe doesn't seem to support this.

I believe a similar feature is currently in wishlist, you can comment your specific use-case there so that you will receive notification if there's any update in the future.
That being said, have you tried setting the billing cycle anchor & proration behavior as shared in Stripe Docs by launching the checkout via 'Purchase Plans with Checkout method' in DOM Package?
I have not tested this personally yet, but it might be worth a try if it fits for your project.
