What if I have several plans and for some of them I want the user's plan to be replaced and for others I want them to be added to the current plan? Is this possible? I add a sketch

Yes, by using the data-ms-price:update or data-ms-plan:add you should be able to make that happen.

Just for clarification though, is add price meaning they would have to purchase Price 1 and then either Price 2 or Price 3? (In this scenario, Price 1 would be data-ms-price:add, price 2&3 is data-ms-price:update)
Or is it they can only select either product, and they have to pay for either Price 1 or Price 2 or Price 3? (In this scenario, it would be just data-ms-price:update”)
hm, I would make Product 1 & 2 separate plans. I would hide the price 1-3 for each product in their respective plans and not show the user that page to the other membership unless they switch between products/plan.
